Location: Santiuste de San Juan Bautista is a small village located in the D.O. Rueda, in the region of Castilla y León, in the province of Segovia, Spain. Varietal: 100% Verdejo
Vineyard: Grapes for Michiko are sourced from Carrascal, a single plot located in a sun-drenched, plateau-shaped area with distinctive gravelly/sandy soils, at 900 meters above sea level. Prephylloxera bush-trained vines are 180-200 years old. Farming is organic.
Vinification: Grapes were hand harvested in late September, the grapes were partially de-stemmed and lightly macerated on the skins for a few hours. Subsequently, they were pressed in a vertical press and the must then underwent alcoholic fermentation with indigenous yeasts, in 500 liter dolia (Spanish clay amphora). After fermentation the wine was left to rest on its fine lees for six months in dolia. The resulting wine was then placed into an old 500-liter sherry butt, to spend a year aging under a veil of flor, then bottled without fining or filtration. No sulfites were added at any point.
Tasting Note: Complex and robust, offering citrus flavors, grapefruit and lime, blended with spices and aromatic herbs and almond. Flavors are deep, concentrated, masculine. White peach, almond, oxidative notes. Finish is saline and long.
Bottles Produced: Limited production of about 500 bottles
About the wine: Esmeralda’s intention with this wine was to delve into her family’s roots, which come from Cádiz and Sevilla, the home of sherry. For Michiko (mi chico = my boy) a small portion of the wine from Carrascal was biologically aged in an old 500-liter sherry cask from Bodegas Gutiérrez Colosía, entirely under a layer of flor yeast, as is done in Fino sherry production. This cap of yeast prevents contact with the air while at the same time transforming the wine as it ages.
