For Matías, this is one of the most important vineyards in Mendoza’s Uco Valley. Here, Sauvignon Blanc is rooted in white, calcareous soils – “aromatic earth” as he calls it – infusing the wine with soft, chalky minerality. It also defends the grape against its tendency to become a caricature of itself: the grape’s signature (and often, sharp) green flavors come in the form of delicate baby parsley and fresh cut flowers; its punchy grapefruit citrus is traded for soft preserved lemon. All wrapped in elegant, phenolic texture from 8 months of skin contact in amphora. One of the most zen expressions of the grape, from anywhere.

- Hand harvested and the grapes are transferred to small clay amphorae by gravity
- Fermented with indigenous yeasts between 16º-18ºC, 50% whole cluster

- Bottled unfiltered, unfined and without added sulphites
