From several parcels ranging from 6 year old to 100- 200 year old vines planted on the steep terraced slopes with northeastern exposure at 800-1450m above sea level, grown in volcanic basalt clay soils with red stones.
Vinification Method
The grapes were harvested by hand and gently pressed whole cluster into stainless steel tank for the first 24 hours of settling. The juice was then racked to used French oak barrels to complete primary and malolactic fermentation and age for 9 months before being bottled
unfined and unfiltered, with only a small addition of SO2.
