100% Gamay from organically farmed vines planted in light, shallow soils; it is a cuvée made thanks to purchased grapes, so it strays slightly from Henri’s region of origin. The grapes were harvested by hand. Natural vinification without additives: whole-cluster maceration, gentle pressing, 9 months of aging in stoneware jars and a in few old barrels (only 5 to 10%). Bottled without fining or filtration, with just a micro-dose of sulfur; followed by 9 months of additional aging in bottle before release.
