La Gritona is a woman-led tequila made entirely by hand at Vinos y Licores Azteca (NOM 1533) in the Valle de Guadalupe, Jalisco, under the direction of master distiller Melly Barajas Cárdenas. Crafted from 100% blue Weber agave grown in the region’s iron-rich red soils, the piñas are harvested at full maturity (8–10 years), then roasted in stone ovens for 24 hours and rested for another 24 before being crushed on a roller mill.
Fermentation proceeds slowly and spontaneously in open-air stainless tanks using wild yeasts, and the spirit is double-distilled in stainless steel stills with copper coils. It rests for 8 months in used American whiskey barrels—never new oak—which lend gentle structure without obscuring the core of bright, vegetal agave character. Bottled unfined and unfiltered, with no additives of any kind.
The bottles are hand-blown from recycled Mexican glass (often reformed Coke bottles), underscoring the brand’s sustainability ethos
