After a year away, I'm back with an Elbling from my old vines. Elbling is always one of those things... The image I have of the grape variety is constantly changing. The grape continues to give me many opportunities to experiment. Possibly even more freedom than my other grape varieties do, as I usually have some kind of ideals floating around in my head. 2023 makes Elbling delicate and fine again. It lives from its acid structure and a watery element that I hardly find in any other grape variety. This is logical, as the grape variety produces very thick berries with thin skins and all the more juice. As annoying as the care of the Elbling is throughout the year, the result in the bottle makes up for it. - Jonas Dostert
