100% Pinot from Raphaelles own vines in Yonne Planted in the early 2000s on limestone slopes, all south and southeast-facing with a rich, biodiverse surroundings. IN the cellar the pinot sees a 100% whole cluster, 2-week ambient yeast fermentation and maceration. Aged for 12 months in barrels. SO2 added only after aging (0-15 ppm total SO2 at bottling)..
