For the first time, there is a sparkling wine from 2021, made from 50% Chardonnay and 50% Elbling. The 2021 vintage with its cool weather was ideal for sparkling. After 25 months on the lees, the crémant was disgorged as brut nature. Last year, I had already announced that I wanted to delve a little deeper into the topic of sparkling wine. Sparkling wine is still a ubiquitous trend, but I feel more committed to the tradition of my father, who has been producing very good sparkling wines since the mid-1980s. Sparkling wines with a low dosage have been my favourites right from the start. At the moment, the filling and disgorging of the sparkling wines is done externally, which involves a considerable amount of extra work due to the transport (2 hours travelling time). In the next few years, I would like to become independent of this and set up a small, independent sparkling wine production business in order to further develop the topic. - Jonas Dostert
