From a late-ripening, high elevation parcel in Fleurie-Poncié, it’s harvested a full week later than most of Fleurie which brings excellent phenolic balance (and as Andrew puts it, “the joyousness”) to the wine. Full carbonic maceration in concrete tank combined with the extra hang time comes together for a remarkably layered, complex bottle of classic Beaujolais.
‘Lardons’ is a cheeky nod to the soil here, a unique pink granite with streaks of white quartz that resembles bacon.
