This Demeter-certified biodynamic rosé is Pinot Noir from wind-cooled Van Duzer Corridor sites, harvested early for lift and direct-pressed to pale pink. Fermentation starts spontaneously in stainless steel and finishes in bottle as a traditional pét-nat, with no dosage and minimal sulfur; the wine is released unfined and unfiltered under crown cap. It is brisk and bone-dry, showing strawberry and pink grapefruit with a hint of rhubarb, fine mousse, and a lightly saline finish.
