AGE OF VINES : From 30 to 56 years old.
HARVESTING & VINIFICATION : The grapes are hand- picked into crates and sorted manually in the vineyard before a second, table sorting in the cellar. Pressing in a pneumatic press in whole bunches. Fermentation in stainless steal vats for 20 to 25 days with temperature
control on fine lees. Indigenous yeasts. Malolactic fermentation in vats.
AGEING : 7 months in concrete or stainless steal vats. Unfined and unfiltered at bottling.
PERSONALITY : Great whites are all about texture, and no grape variety conveys the notion of delicacy sculpted on the great terroirs of the southern Rhône better than Clairette. Here it is adorned with a chiseled and vibrant finesse, enhanced with a portion of white Grenache
which gives it substance and depth. A white which combines freshness and complexity for gastronomy or aging.
