Alessandro Salvano’s project, Drink Wines Not Labels, strips winemaking down to its core: old vines, zero additives, and clean cellar work. This is 100% Chardonnay from a single site outside Alba, grown on marl and limestone, farmed without chemicals.
Fermented whole cluster in concrete with native yeasts, it sees zero sulfur and no fining or filtration. Eight days on skins before pressing into tank. It’s lean and textural with a quiet grip, showing citrus pith, mineral tension, and just enough weight to ground the edges.
A Chardonnay made without shortcuts or flourishes—precise, expressive, and entirely unmasked.
