Salvano’s DWNL project is guided by a simple idea: drink the wine, not the label. This 100% Dolcetto Rosso is sourced from organically farmed vineyards in Montelupo Albese, just outside Barolo. Fermented whole‑cluster with wild yeasts over eight days, it undergoes full malolactic conversion and ages only in stainless steel. Bottled unfined and unfiltered, with minimal intervention
