Primary fermentation is carried out in temperature-controlled stainless steel, using indigenous yeasts. The wine undergoes full malolactic conversion, and is then bottled for secondary fermentation (tirage) in spring following harvest.
Aged sur lattes for 10 years before disgorgement, allowing deep autolytic development. The wine is released with a Brut-level dosage (exact grams/L not specified), balancing structure with lift. No fining or filtration is employed.
Corbon does not use oak, choosing instead to emphasize purity of fruit and terroir transparency through long élevage on lees.
