Fruit is direct-pressed, then aged 45 months in 500L used barrels, a regime that builds depth without oxidative character.
The 2020 is a benchmark expression of ouillé Savagnin: citrus oil, preserved lemon, and white orchard fruit layered over a saturated chalk–marl mineral core, with subtle nutmeg and herbal inflections emerging from extended élevage. Texture is sleek but concentrated, acidity laser-cut, and the finish long, saline, and quietly powerful. A rare, precision-driven Jura white that shows just how profound Savagnin can be under Dodane’s patient, detail-obsessed hand.
