From his 0.32 ha parcel on the Vallée Clabory slope between Beine and Poinchy, this 100% Chardonnay is grown biodynamically on thin marly-limestone soils. After whole-cluster pressing, fermentation proceeds with native yeasts in stainless steel at low temperature and the wine is aged 9–12 months on fine lees without new oak.
