Grapes: 2019 is a field blend of Pinot Noir (70%), Pinot Gris (15 %) and Blaufrankisch (15 %)
Vineyards: the BF comes from rich clay/loess plot called Otáhal, PG & PN from Zadní Hora which is pure loess.
Making of: The grapes are hand-harvested together, destemmed, gently stomped, and macerated on skins. Spontaneous co-fermentation with indigenous yeast fr 25 days in open-top vats, with only free-run juice aged in bigger old barrels of 225 and 600 liters, where it then lays undisturbed for ~2 years on its fine lees. No fining or filtration, with cca 5ppm of sulfur at bottling.
