2021 “Outside” is Alessandro Salvano’s most ambitious cuvee under his Drink Wines Not Labels—technically a Langhe Nebbiolo but, Barolo in everything but name. As the site is just beyond DOCG boundaries to label Barolo he labels it 'Outside,' Sourced from organically farmed vineyards in Montelupo Albese, the wine is fermented with about 80% whole clusters and native yeasts, then aged for over 38 months, w/ 18 of them being in large oak casks. It’s bottled unfined, unfiltered, with minimal sulfur. Light in color but serious in structure, it opens with lifted aromatics—rose petal, dried cherry, and tobacco—before settling into a taut, saline-driven frame of fine tannins and mineral grip.
