From a 60-year-old parcel in “Aux Fournaux” that has been farmed organically since our first vintage in 2011. It’s located at the base of the slope providing better sunlight interception and drainage than most Savigny villages vineyards, meaning the wine has fine definition and weight for a villages appellation wine. “Aux Fournaux” is at the junction with Pernand-Vergelesses and Aloxe-Corton, with racy fruits from the former and rocky tannins from the latter.
Hand-harvested, chilled overnight, and sorted, and placed in two vats; one concrete, one wood, for a native fermentation. After 10 days the wooden vat was dug out, destemmed and returned to the vat to finish fermentation. The concrete vat was foot crushed on it’s 12th day to release some sugars to warm the ferment. Both tanks were pressed and assembled together after 13 days on skins. The wine spent 12 months in 350L barrels aged between three and four years (no new wood). Racked out of barrel under inert gas pressure, settled for two weeks in tank before being bottled under a DIAM 10 closure without fining nor filtration.
