In the cellar, Lienhardt ferments his red wines using whole bunches (no destemming) and indigenous yeasts, following a low-intervention approach. Macerations are gentle and sulfur is avoided during fermentation. Élevage for the domaine’s reds is carried out in older barrels and neutral vessels such as amphora or concrete egg, with very limited new oak usage. All wines are bottled without fining or filtration and with low sulfur additions only at bottling.
