Indigenous yeast, concrete. Hand picked, chilled overnight to 12-14c, and placed
as whole clusters in a concrete tank. A pied de cuve, made from grapes picked seven days
earlier, was poured on top to ensure a quick start to fermentation. After ten days, the grapes were devatted and pressed before fermentation was complete, which help to give the wine a light-on-it’s-feet character and a preserve the bright fruit notes. Aged in a 3000L oak vat for eight months with fine lies for texture and suppleness before being bottled unfined and unfiltered.
