  • Vinification: Spontaneous fermentation with native yeasts in large format Stockinger foudres without temperature control

  • Aging: 12 months in the same barrels on the lees. Malolactic fermentation is spontaneous. The wine is then racked into Italian Nico Velo ceramic eggs for 12 months.

Beyond Ribeiro

Two new producers – Mixtura and Augalevada – both call Ribeiro home. But their transformative work reaches far beyond the appellation. Stylistically, the wines nod to Jura (with playful use of flor) and Burgundy, offering both elegance and polish. More literally, their sourcing spans the region: to the Galician coast (Salnés!) and into Portugal.
