From young-star Gaspard Brochet comes this precision-crafted Blanc de Blancs sourced from 1er Cru parcels Les Plantes and Les Prés Mousseux in Écueil. Practicing biodynamics since 2022, the soils here are rich black clay with natural water sources—managed with a strong focus on biodiversity. Native yeast fermentation takes place in small oak barrels, with no fining or filtration. Disgorged Jan 8, 2025 (fruit day, waxing moon) with 1 g/L dosage. 100% Chardonnay. 2,940 bottles produced.
