This wine bears the name of a witch who was tried in Castel Noarna in the 17th century. La Mercuria is a cuvee of cabernet sauvignon and merlot. Tasting: cassis and small fruits on the nose, spicy. In the mouth, elegant and fresh with a pleasant tannic character.
Exposure and elevation: East, South-East; 320 meters above sea level. Soil type: calcareous, silt 18-22%, rich in minerals (porphyry, quartz, basalt, slate), very rich in skeleton.
Training system: row 6000 plants per hectare. Production: 1,5 kg per vine. Average age of the vines in production: planting year 1990
Harvest and selection of the grapes by hand from the second half of September to mid-October depending on the vintage. Spontaneous fermentation with indigenous yeasts, no use of fermentation aid. Malolactic fermentation: it is not controlled, it is normally carried out completely.
Method and duration of aging: aging in wood in the presence of the noble lees, from 12 to 18 months and then in the bottle for at least 6 months. Mercuria is not filtered before bottling.
