This is Savagnin made as an orange wine, fermented with native yeasts and left on its skins for 284 days, then aged three years in older barrels. The domaine—run by Jean-Michel and Laurence Petit in Pupillin—has worked organically for decades and bottles with minimal intervention and low sulfur. The result is powerful and textural, with quince, warm spice, and black-tea tones carried by impressive, fine tannins.
