From the Matthiasson family’s organically farmed Oak Knoll District plantings, Refosco is rendered in a fresh, savory register rather than a heavy one. The fruit was picked on the earlier side and fermented with native yeasts in small tanks, mostly destemmed, with gentle daily pump overs to keep the tannins fine. Élevage was deliberately quiet—time in neutral French oak (older barrels and puncheons) on the lees—so the vineyard voice stays front and center
