Terroir: Blue marl soils dating back to the Lias epoch.
Cultivation Method: Vines have been undergoing organic conversion for several years.
Certified as in organic conversion since late 2019.
Vinification: Hand-harvested grapes.
During the harvest season, the Savagnin grapes are pressed and blended.
The process involves halting the alcoholic fermentation of the grape juice by adding one-third vieux marc du Jura (aged pomace brandy from the Jura region) to achieve an
alcohol level of 17%.
The blend is aged in oak barrels for over one year.
