All Chadonnay from 3 parcels in Reuil on right river of Vallée de la Marne. Grapes are picked by hand when fully ripe and are then pressed slowly and gently. All juice is moved by gravity into steel tank. Once each parcel is pressed, the juice is transferred from tank into 228, 350, and 330L barrels for a long, cold, and slow native yeast fermentation. 100% malolactic fermentation, unfined and unfiltered. Time on yeast 66 months; Dosage 2.2 g/L; Disgorgement February 2025. The tirage dates are engraved on the bottle, as is the disgorgement date.
