Mingaco, is one of the area’s most progressive projects. Mingaco was born in early 2016, led by viticulturist Pablo Pedreros, along with Daniela De Pablo. The two took on the challenge of converting old plantings of Cinsault and Moscatel de Alejandría - a vineyard Pablo’s father planted - to full-bore regenerative and biodynamic farming. No tilling, polyculture and hands off cellarwork define their wines.
