Notes from Wasenhaus – “Our entry level Pinot Noir from mainly sandy and loess soil and different origins, a part fermented entirely de-stemmed and a part as 100 % whole bunch in a classic open oak vat fermentation.”

Christoph Wolber and Alexander Götze source this Pinot Noir from loess and volcanic slopes in the Kaiserstuhl and Breisgau, farmed with low inputs and harvested by hand. Fermentation is spontaneous with a meaningful share of whole clusters and gentle daily pump overs, followed by élevage in older barriques and demi-muids on fine lees. The wine is bottled with minimal sulfur, unfined and unfiltered.
