A Chardonnay aged *ouillé* (topped up) for over two years serves to soften the
intensity of the Savagnin, which was aged *sous voile* (under a veil of yeast) in
barrels for four years. These two grape varieties are blended together at the time
of bottling.
This specific selection yields a wine with greater structure and distinct aromas of
walnuts and almonds.
