From the limestone–marl slopes at the northern end of Marsannay, ‘Clos du Roy’ is Pataille’s most stately village site, farmed organically and harvested by hand. Fermentation is spontaneous with a healthy share of whole clusters and gentle daily pump overs to favor perfume over extraction, followed by a long élevage in mostly used barrels; the wine is bottled without fining or filtration and with minimal sulfur.
