Fabien employs a non-interventionist vinification philosophy. Grapes are harvested by hand. Whole cluster fermentation occurs spontaneously with native yeast in concrete vats and barrels. The wine ages until maturity, either in concrete tanks, barrels or large wooden vats (foudres).
