This is a wine that bristles with energy. The fruit dives into lime, citron, and yuzu, as well as lots of citrus flowers and hints of white tea. The minerality takes the oceanic components of the limestone bottling and turns it up to eleven, absolutely exploding with sea salt, kombu, oyster shell (or is it percebes shell?). This is an incredible triumph, and just a few hundred bottles produced for the world.
