Vineyard Area: From various plots in the villages of Wettolsheim, Turckheim, Wintzenheim and Eguisheim
Soil: Clay-limestone on the hillsides and sandy-loam in the plains
Exposure: Varying east-facing
Vinification: Harvested and sorted by hand with the aim of picking grapes at a potential alcohol of 12.5% (for a finished still wine). The fermentation begins in stainless steel tank and is stopped by lowering the temperature at an alcohol level just over 11% with about 22 grams of residual sugar. The wine is bottled and a second fermentation occurs with no added sugars or yeasts to promote it. There is no dosage and it is therefore a “Brut Nature.”
Maturation: 24 months sur latte (bottles placed on wooden racks on their sides)
