This is sourced from the most northwestern part of the Goldgrube… it’s a cooler section of the vineyard, also 100-year-old ungrafted vines. For this wine Daniel does basket press with half of the grapes cold soaking for three days and then stainless steel for aging. still a slow cool old school fermentation, longer elevage, bottling, etc. There is a sleeping power to both the acid and the phenolic structure here, it is really grand and impressive while still soulful.
