From limestone soils and vines around 20 years old. Fermented and aged in old barrels that are kept topped up.
After spending several years abroad making wine, Jean-Michel Petite returned to his small village of Pupillin to take over his family domaine in 1990. When Jean-Michel bought his vineyards, he always asked the previous owners what each vineyard expressed. None of them knew because everyone, even Jean-Michel’s parents, had always sold to the cooperative. Consequently, Jean-Michel decided to start from scratch, vinifying each parcel separately to discover how the gray marl provided a different expression of terroir from the red marl. His priorities are to respect the soil and produce quality wines. He has converted all his vineyards to lutte raisonée or organic and now owns 6.5 hectares in the best area of the Arbois.
