A tribute to Becky Wasserman, from the oldest vines of the Domaine -- planted in 1937 (which is Becky's birth year). The rest of the vines were planted in 1938 and 1969. This cuvée is aged entirely in barrel. Whereas the regular Aligoté has both tank and barrel. Grapes lightly crushed, gentle pneumatic pressing. Settling of must for 12 to 24 hours. Alcoholic fermentation and aged for 12 months in used wood (regular Aligoté is 12 month in tank). Fining and filtering if necessary.
