- Viticulture: From purchased grapes (certified organic)
- Vinification: Each variety vinified separately, partial whole cluster (20-40% for Gamay, 20% for Syrah, 40% for Grenache), indigenous yeast fermentation in cement tank, aged 6 months in cement tank. No fining, light filtration.
