‘L’Ancestrale’ is drawn from 60–80-year-old Pinot Noir on Marsannay’s hillsides, cropped at very low yields of about 20 hl/ha. Fermentation is natural with roughly 50% whole clusters and gentle pump overs, followed by about 24 months of élevage: a higher share of new barrels in the first year, then once-used wood to knit the texture while letting the fruit speak.
