VITICULTURE: Organic (EcoCert) and biodynamic farming; Pruning method: Guyot Nantais; Planting density: 6,800 vines/hectare
VINIFICATION: Exclusively hand-harvested grapes. Direct pressing of whole bunches in a pneumatic press. No chaptalization or clarification. Alcoholic fermentation with natural yeasts.
AGING: Aged in glass-tiled concrete vats for 6 monthsb on fine lees
NOTES: A wine best expressed in its youth, Amphibolite is citrusy and sizzling with a lovely salinity on the finish. Jo refers to Amphibolite as a "free-spirited" Muscadet!
