25% grenache blanc, 25% ugni blanc, 25% grenache noir, 25% syrah
Organic grapes from Vincent Bremond in Beaumont de Pertuis in the east of the Luberon
All whole clusters, lightly submerged in the final press and lees from the Bombe Achromique, and then carbonically macerated and fermented for 30 days. All natural yeasts and no additives (SO2, enzymes, etc).
Pressed to stainless tank to finish fermentation and then aged for 9 months on fine lees and bottled without SO2.
