Il Baratto is the name of an ancient vineyard, planted in a hilly area with high slopes and terraced parts exposed south-west.
Grapes are foot trodden in an ancient vertical press. Spontaneous fermentation is with native yeasts and no temperature control. Aging lasts for six to seven months on the lees with repeated bâttonages in a small stainless steel tanks. 10 to 20mg per liter of sulfur added one week before bottling.
