Chardonnay from the single vineyard of La Cote aux Cerisiers planted in 1975 in the village of Moussy (massal selection).
Soil Composed of chalk and flint
Viticulture Practicing organic; manual harvest and stringent grape selection in search of perfectly ripe grapes.
Vinification Direct press and selection of the first juices; cold settling for 12 to 24 hours without enzymes before alcoholic fermentation to extract more aromas, then the juice is put into barrels. Fermentation in barrels with frequent lees stirring and regular topping up. Partial malolactic fermentation.
Aging Eight months oak aging. No fining and light filtration, disgorgement with dosage liqueur vinified in barrels.
The nose, spring-like, evokes the blossoms of fruit trees. The palate is creamy and full-bodied, while the finish is silky, fresh, and lingers on the palate (which makes you thirsty!).
