Before settling back in his family’s home village of Chézy-sur-Marne, Gauditiabois cut his teeth as an apprentice under Jacques Selosse in Avize.
He’s taken a similarly rigorous approach: organic farming in the vineyards, and a natural, vinous approach in the cellar—using indigenous yeasts, native fermentations, little or no added sulfur, and often aging in 400- or 600-liter barrels. The results are powerful, spiced, and delicious: a compelling expression of the western Marne.
