VINIFICATION Harvest: Harvested by hand in mid-September
Elaboration: Spontaneous Fermentation. 15 day maceration with skins,
soft pressing. Matured for 1 year in 50 HL French oak barrels (neutral
toast), one year in stainless steel, and a minimum of 6 months in the bottle
before release.
WINE Ripe strawberry, ripe cranberry and red plum with granitic mineral
backbone and faint baking spices.
