Nerello Mascalese and other local red grapes, all organically farmed. The vines are 50-100 year-old on Etna’s volcanic soils. The grapes were harvested early in mid-September with high acidity level. Soft and gentle pressing for color. Spontaneous fermentation started in inox vat and then finished in the bottle. 8-month aging on its lees. 375 cases produced.
