From the tiny, organic micro-estate of Hiroto & Rie Sasaki in Castiglione Tinella, this is a field-blend red built on Barbera Grosso and Freisa, grown on clay-limestone/loess hills and hand-harvested in micro-lots. The fruit is fermented with native yeasts in open-top vats using gentle daily pump overs, then aged in neutral barrels and vats (no new oak), bottled unfined, unfiltered, and with very light sulfur.
