2022 Le Grappin x Vin Noé Bulles, Burgundy, France
$63.00
We each contributed half of the vin clair, ours being of Chardonnay from the “Derrière
Baubigny” Haute Côtes de Beaune vineyard and Vin Noé’s being a mix of Chardonnay from his
Mâcon-Villages parcel near Tournus and a parcel of Chenin Blanc planted in Meursault (!),
making the cuvée 75% Chardonnay and 25% Chenin Blanc. The two halves were blended in
Spring 2023 once dry and malolactic conversion was complete and was elaborated by one of
Burgundy’s best crémant houses. The prise de mousse was done with a cultured house yeast and
a house liqour, rather than with industrial yeast and grape concentrate (as is the method used
in the vast majority of traditional method sparkling wines). The wine spent 18 months on its
lies from the secondary fermentation in bottle before being disgorged with no sulphites or
dosage (ie no added sugar at disgorgement). It will now spend up to a year in bottle post
disgorgement to ensure finesse of bubbles.
