35-year-old vine, blend of two plots "Les Grands Charrons" and "Les Narvaux"
Manual harvest, whole bunch pressing and long alcoholic fermentation (45 days) at low temperature (15-18°C) in Burgundy barrels (228 L), aging for 12 months in barrels with 35% new barrel s then 4 months in stainless steel vats.
Very slow and respectful lenticular filter filtration
Very moderate use of sulfur, added after malolactic fermentation and then at bottling
20mg/L free SO2 at bottling, low content for a great white Burgundy
